Fried rice and Palak paneer




Recipe of fried rice:

Ingredients:
  •    Basmati rice 1 cup
  •    1 carrot cut into thin pieces
  •    100 grams green beans chopped into small pieces
  •    1/2 cup of green pieces
  •    2 bay leaves
  •    1/2 cup of cashew nuts & raisins
  •    salt as needed
  •    2 tsp of sugar
  •    Dust  of 1cinnamon 2 cardamom & 2 cloves.

Preparation:

For 1 cup of rice take 3 cups of water in a pan and boil the water 10-15 minutes. Then add 2-3 drops of vegetable oil or olive oil to the boiling water. At this point you can add the bay leaves or you may add in the tempering, but i prefer to add now so the nice flavor will come out. When the water starts boiling add the rice & keep in mind that rice should not be fully boiled. After boiling, drain the water & spread the rice on a tissue paper. When the rice become in normal temperature you can refregerate it for half an hour to make it perfect for fried rice. Now take a pan & fry all the vegetables. Be careful about not to fry them much. Keep the fried vegetables aside in a bowl. Next step is tempering. For that heat 2 tbsp ghee in a pan. Then add the dust of cinnamon, cardamom & cloves. Then mix the rice & little pinch of salt to it and add the sugar. Now stir the rice for 1 minute. Then add the fried vegetables, the cashew & raisins with the rice. Again stir it for 1-2 minutes & your rice will be ready.
  

Recipe of Palak Paneer:

   Ingredients:
  
  •    1 bunch of spinach
  •    100 gms cottage cheese(paneer, cut into slices)
  •    1 tomato puree
  •    Half cup yogurt
  •    1/2 tsp cumin seeds
  •    Little pinch of turmeric powder
  •    1 tsp red chili powder
  •    1/2 tsp of garam masala powder
  •    1/3 cup of cashew nuts
  •    Salt & 1tsp sugar
  
Preparation:

First boil water in a pan. Then add the spinach(wash it thoroughly) in the boiling water. After 2 minutes take the spinach out from the water & put them into cold water so that the spinach leaves will be nice green in color. After 1 minute take out the spinach from the cold water & keep it in blender. Next heat 1tsp oil in a pan and add ginger garlic onion cashew all together & saute it for 1 minute. Then add them into the blender with the spinach & make a paste. Now again heat 2tsp oil in the pan or you can use ghee also. Then add the cumin seeds in the oil & after few seconds add the tomato puree. Now saute it for 1 minute & add the turmeric & the red chili powder. Saute it for another 20 seconds & then Put the Yogurt into the mixture. Again give it a smooth stir for 1 minute. At this stage keep your oven in medium  flame. Then add the spinach & ginger garlic onion cashew paste. Stir it for 2 minutes & add the paneer cubes. Now cook it for 2-3 minutes & lastly add the garam masala powder & switch off the flame.
